Lemon Dream Bars
Crust
- ⅓ cup butter
- 1 cup AP flour
- 2 tbsp sugar
- Cut butter into flower and sugar until fine.
- Press into ungreased 11x7, 9x9, or 8x8 pan.
- Bake at 350° for 15 to 20 minutes until set but not brown.
Filling
- 2 eggs, beaten
- ½ cup firmly packed brown sugar
- ¾ cup coconut, chopped
- ½ cup nuts, chopped
- ¼ tsp salt
- ⅛ tsp double-acting baking powder
- ½ tsp vanilla
- Mix well.
- Spread on partially-baked dough.
- Bake at 350° for 25-30 minutes. Frost immediately.
Frosting
- 2 tsp grated lemon rind
- 2 tbsp lemon juice
- 1 cup sifted powdered sugar
Mix until smooth.
