Banana Spritz Cookies

makes 5 dozen

  1. Cream shortening, gradually beat in sugar. Beat until fluffy.
  2. Add egg yolk, beat well. Stir in banana, salt, and vanilla, mix thouroughly.
  3. Add flour, a little at a time, mixing thoroughly after each addition.
  4. Divide dough in thirds, tint one third green, one third red, and leave one third as is. If dough is soft, chill about 1 hour.
  5. Press dough onto ungreased cookie sheets. After molding, decorate with red or green sugar and sprinkles.
  6. Bake at 375°for 8 minutes, or until edges are light brown. Remove from sheets and cool on rack.
