Coconut Meringues

makes 18 meringues

  1. Beat egg whites at medium speed until soft peaks form, about 3 minutes.
  2. Gradually add sugar, increase mixer speed to high and beat until stiff peaks form, about 2 to 3 minutes.
  3. Gently fold in coconut with wooden spoon.
  4. Drop large spoons of mixture onto buttered and floured baking sheet.
  5. Bake at 250°until golden brown, about 1 hour.
  6. Turn off oven and leave meringues inside to dry, about 1½ hours.
