Coffee Toffee Bars

makes 3 dozen bars
- 1 cup soft butter
- 1 cup brown sugar, firmly packed
- 1 tsp almond extract
- 1 to 2 tbsp instant coffee
- ½ tsp double-acting baking powder
- ¼ tsp salt
- 2 to 2¼ cups sifted AP flour
- 1 cup (6 oz) semi-sweet chocolate morsels
- ½ cup blanched almonds, chopped
Almond Glaze
- 1 tbsp soft butter
- ¾ cup sifted powdered sugar
- â…› tsp almond extract
- 1 to 2 tbsp milk
Combine butter, powdered sugar, and almond extract. Add milk until of spreading consistency.
- Cream butter and brown sugar.
- Blend in almond extract, instant coffee, baking powder, and salt.
- Add flour to form a stiff dough.
- Stir in chocolate and almonds.
- Press into well-greased jelly roll pan.
- Bake at 350° for 20-25 minutes. Frost while warm.
