Fruit Filled Spritz

makes 6½ dozen cookies
- 4 cups sifted AP flour
- ½ tsp soda
- ½ tsp salt
- 1 cup butter
- 1 cup sugar
- ½ cup brown sugar, firmly packed
- 3 eggs
- ½ tsp vanilla
- ½ tsp almond extract
Frutti Nut Filling
- 1 cup water
- ½ cup sugar
- 1¼ cups cut dates
- 2 tsp grated orange rind
- ½ cup candied cherries, finely chopped
- ½ cup coconut, flaked or shredded
- 1 cup nuts, chopped
Combine water, sugar, dates and orange rind in a soucepan and cook, stirring constantly until thick. When cool, stir in cherries, coconut, and nuts.
- Sift together flour, soda, and salt.
- Cream butter and sugars.
- Blend in eggs, vanilla, and almond extract.
- Add dry ingnedients gradually, mix well.
- Chill about 2 hours.
- Using saw-toothed spritz plate, press dough into strips across ungreased cookie sheet.
- Spread each strip with filling. Press a second strip of dough over filling.
- Bake at 375° for 12 to 15 minutes. Cut into 2 inch bars immediately.
