Fruit Filled Spritz

makes 6½ dozen cookies

Frutti Nut Filling

Combine water, sugar, dates and orange rind in a soucepan and cook, stirring constantly until thick. When cool, stir in cherries, coconut, and nuts.

  1. Sift together flour, soda, and salt.
  2. Cream butter and sugars.
  3. Blend in eggs, vanilla, and almond extract.
  4. Add dry ingnedients gradually, mix well.
  5. Chill about 2 hours.
  6. Using saw-toothed spritz plate, press dough into strips across ungreased cookie sheet.
  7. Spread each strip with filling. Press a second strip of dough over filling.
  8. Bake at 375° for 12 to 15 minutes. Cut into 2 inch bars immediately.
