Pinwheel Cookies

Date Filling

Combine dates, sugar and water in a sucepan. Cook over low heat, stirring constantly, until thick. Cool and add nuts.

Chocolate Filling

Melt chocolate over boiling water. Remove from heat and stir in coconut.

  1. Sift together flour, soda, salt, and spices.
  2. Cream butter and sugar.
  3. Add egg and vanilla, beat well.
  4. Blend in dry ingredients.
  5. Roll out dough on a floured surface to form two 10x8" rectangles. Spread with filling and roll up along the long side.
  6. Wrap in waxed paper and chill 2 hours.
  7. Cut into ¼" slices, place on lightly greased cookie sheets.
  8. Bake at 400° for 8-10 minutes.
