Pinwheel Cookies

makes 5 dozen
- 2 cups sifted AP flour
- ½ tsp soda
- ½ tsp salt
- ¼ tsp cinnamon
- ¼ tsp cloves
- ½ cup butter
- 1 cup brown sugar, firmly packed
- 1 egg
- 1 tsp vanilla
Date Filling
- 1¼ cups cut dates (8 oz package)
- ½ cup sugar
- ½ cup water
- ½ cup nuts, chopped
Combine dates, sugar and water in a sucepan. Cook over low heat, stirring constantly, until thick. Cool and add nuts.
Chocolate Filling
- 1 cup semi-sweet chocolate morsels (6 oz package)
- 1 cup chopped coconut
Melt chocolate over boiling water. Remove from heat and stir in coconut.
- Sift together flour, soda, salt, and spices.
- Cream butter and sugar.
- Add egg and vanilla, beat well.
- Blend in dry ingredients.
- Roll out dough on a floured surface to form two 10x8" rectangles. Spread with filling and roll up along the long side.
- Wrap in waxed paper and chill 2 hours.
- Cut into ¼" slices, place on lightly greased cookie sheets.
- Bake at 400° for 8-10 minutes.
