Slice 'N' Serve Cookies

Frosting

Cream butter. Blend powdered sugar alternately with cream. Add vanilla.

  1. Sift together flour, baking powder, and salt. Stir in dates and pecans.
  2. Beat eggs with vanilla. Gradually add sugar, beating constantly until thick and ivory colored.
  3. Fold in the dry ingredients, half at a time, gently.
  4. Spread in a jelly roll pan, lined with waxed paper, well greased and heavily floured.
  5. Drain cherries. Arrange 10 cherries across each end of the batter.
  6. Bake at 325° for 25 to 35 minutes.
  7. Turn out onto waxed paper sprinkled with powdered sugar. Remove paper, cut into two 10x7" rectangles.
  8. Roll each tightly, beginning with the cherry end. Wrap and cool.
  9. Spread rolls with frosting and roll in pecans. Chill, and cut into ½" slices before serving.
