Taffy

  1. Combine sugar, corn syrup, water, and cream of tarter over low flame. Stir until sugar dissolves.
  2. Cook until hard ball stage, without stirring. Remove from heat and add flavor and coloring if desired.
  3. Pour onto platter and let cool enough to handle. With greased hands, work taffy until snow white and porous.

Divinity Fudge

  1. Cook sugar, syrup, and water over low heat until sugar is dissolved, stirring constantly.
  2. Boil rapidly to 265 F (130 C)
  3. Beat egg white, vanilla, and salt until stiff.
  4. Add syrup mixture slowly, beating only until mixture will hold itsshape and is still glossy.
  5. Stir in nuts.
  6. Spread lightly in buttered pan or drop by teaspoonfuls onto waxed paper.
