Steak and Onion Pie

  1. Mix ¼ cup flour, salt, pepper, and spices. Dip meat in flour mixture.
  2. Brown meat in bacon fat. Add onions. Cook until golden.
  3. Add water and cover. Simmer 45 minutes.
  4. Add potatoes and cook for 10 minutes.
  5. Make crust with 1 cup flour, ½ tsp salt, and shortening. Slowly add cold water.
  6. Turn into a pie plate and cover with crust.
  7. Bake at 450°for 25 minutes.

Scalloped Sweet Potatoes and Apples

  1. Boil sweet potatoes until tender. Slice into ¼" pieces.
  2. Butter pie plate and put a layer of sweet potatoes at the bottom, then a layer of apples.
  3. Sprinkle with sugar, salt, and mace. Dot with butter. Repeat layers until pie plate is filled, having the top layer be apples.
  4. Bake at 350°for 50 minutes.

Quiche Lorraine

  1. Make pie crust with flour, shortening, water and a pinch of salt.
  2. Place in pie plate and prick bottom and sides with fork. Bake at 450°for 10-12 minutes.
  3. Shred or grate cheese, chop onion, and set aside.
  4. In a bowl, beat eggs lightly with a fork for about 30 seconds. Add cream, sugar, salt, and pepper.
  5. Spread one layer each of bacon, cheese, and onion. Add cream mixture.
  6. Bake at 425° for 15 minutes, then reduce temperature and bake at 300° for 30-40 minutes. Let stand for a few minutes before cutting.

Pastel De Fuente

  1. Cook onion in oil until golden. Add beef and cook 10 minutes over medium heat, stirring to keep it crumbly.
  2. Mix in eggs, olives, and raisins. Add sugar and season with salt and pepper to taste.
  3. Place meat mixture in pie plate and cover with a thick layer of mashed potatoes. Dot potatoes with butter.
  4. Bake at 300°for 30 minutes.

Cornbread Muffins (for cast iron pan)

  1. Preheat oven to 375.
  2. Mix together flour, sugar, baking powder, and salt. Add corn meal.
  3. Add to mxture: egg, milk, and melted butter. Beat until smooth but don’t over-mix.
  4. Bake in greased muffin pan at 375° for 12-15 minutes or until lightly browned.

Popovers (for cast iron pan)

  1. Preheat oven to 425. Grease muffin pan and set aside.
  2. Combine all ingredients in a bowl and beat until smooth.
  3. Heat pan in oven and remove.
  4. Fill pans slightly less than half full.
  5. Bake about 35 minutes.
